Ingredients

  • 2 tablespoons of olive oil
  • 4 tablespoons of butter
  • ½ white onion, diced (or substitute with chives at the end)
  • 4 cloves minced garlic
  • 1 pound shrimp, cleaned and deveined
  • Juice of 2 lemons
  • ½ cup white wine
  • 8 ounces angel hair or linguini pasta
  • 4 dashes hot sauce or red chili flakes, to taste
  • Salt and pepper, to taste
  • Freshly grated pecorino Romano or Parmesan
  • Fresh parsley and basil for garnish

Instructions

Begin by bringing a pot of water to a boil for the pasta. In a large skillet, combine the olive oil and butter over medium heat. Once melted, add the diced onion and minced garlic, sautéing until the onion turns translucent, which should take about 2 to 3 minutes. Incorporate the cleaned and deveined shrimp into the skillet, cooking and stirring for a couple of minutes.

Next, squeeze in the lemon juice and pour in the white wine, followed by seasoning with salt, pepper, and hot sauce. Mix well and then reduce the heat to low. Meanwhile, add the angel hair or linguini to the boiling water and cook until al dente. Drain the pasta, making sure to reserve 1 to 2 cups of the pasta water.

Remove the skillet from heat and add the drained pasta to the shrimp mixture, tossing everything together. If the sauce appears too thick, add a splash of the reserved pasta water to achieve the desired consistency. Taste and adjust seasoning with additional salt and pepper as necessary.

Finally, serve the dish topped with freshly grated Parmesan and a sprinkle of chopped parsley and basil. Enjoy immediately.
